Week 12 Spanakopita


Ingredients:

  • Spinach

  • Garlic

  • Feta cheese

  • Scallions

  • Eggs beaten

  • 1 red onion

  • Fresh dill

  • Phyllo dough (prepacked or homemade)


  1. Mince garlic

  2. Chop the scallion set aside

  3. Add butter and saute onion first

  4. Then Add just bit more butter to a pan and sauté the garlic with onion

  5. Add the spianch to the pan and cook til wilted drain the liquid and toss into a large bowl

  6. Beat eggs into the large bowl with spinach, then add the feta cheese, nutmeg, and scallion and mix well

  7. Season the filling to taste

  8. Place out the phyllo dough into atleast 3 layers

  9. Maker sure to brush melted butter in between layers

  10. Make sure to cover not in use dough, so it does not dry

  11. Scoop about 2 tablespoons at the top of the strips and start folding outwards

  12. Do a triangle fold all the way down the strip of dough

  13. Brush with eggs

  14. Bake until crisp and golden
