Ingredients:
Spinach
Garlic
Feta cheese
Scallions
Eggs beaten
1 red onion
Fresh dill
Phyllo dough (prepacked or homemade)
Mince garlic
Chop the scallion set aside
Add butter and saute onion first
Then Add just bit more butter to a pan and sauté the garlic with onion
Add the spianch to the pan and cook til wilted drain the liquid and toss into a large bowl
Beat eggs into the large bowl with spinach, then add the feta cheese, nutmeg, and scallion and mix well
Season the filling to taste
Place out the phyllo dough into atleast 3 layers
Maker sure to brush melted butter in between layers
Make sure to cover not in use dough, so it does not dry
Scoop about 2 tablespoons at the top of the strips and start folding outwards
Do a triangle fold all the way down the strip of dough
Brush with eggs
Bake until crisp and golden
