Week 1 Homemade Mayonnaise

During the first week of garde manger we learned to make our own mayonnaise.

2 eggs seperated

dijion mustard

lemon juice or vinegar if no lemon juice

oil

salt and pepper to taste

if you like to add flavor you can do so at the end


1. Making sure all your ingredients are room temperature crack the eggs and separate the egg yolks and save the whites for something else

2. Start whisking the yolks till they become lighter in color and thicker

3. Add the dijon mustard and whisk a little more till combined

4. Then add a little bit of the lemon juice continuously whisking (to help keep bowl steady place a wet towel under or make a wet towel halo and place the bowl in it)

5. For this part it is very important to not stop whisking and start slowly pouring the oil in very slowly so an immersion can happen

6. Once the oil starts to imulsive it will start to thicken you can balance it out with the rest of the lemon juice and add the salt and pepper

7. Now you have your standard delicious mayonnaise also here you can add more flavoring if youd like to
