Paczki!

For those of you who may not know I was born in Poland and lived there my first 8 years, its not much but all 8 years as soon as i was able to walk and when i went back to visit i loved being the kitchen with my grandma and aunt. Paczki is a traditional polish bioche-donut type filled with usually some type of jam, rose is the most common. They are eaten on fat Thursday in Poland and in America its eaten on fat Tuesday.

Bread flour(all-purpose) 1000 g
Water 200 g
Milk 200 g
Salt 20 g
Sugar 70 g
Instant Yeast 25 g
Eggs 210 g
Butter 110 g
Rum 10 g
Yield 1845 g
Scale the pieces into 60 g each
Form into balls, and proof seam side down for 45 minutes
Gently press down and form into traditional doughnut shape; proof another 45 minutes
Fry in Oil @ 325 turning half way don't be afraid to let them brown not burn and puff up, drain on paper towel and allow to cool, fill the paczki with desired filling
